The coffee is low in acidity and aromatic, with notes of cedar, tobacco, and chocolate. India Monsooned Malabar AA Aspinwall beans are quite large and light. The coffee's quality grade is AA, and the size is 16/17.
The cultivation area is Chikmagalur, Malabar Coast, West India. The producers are several smallholders in the Aspinwall processing area. The coffee varieties are Kent, Catimor, Selection 9.
The coffee processing method is very rare globally. Hand-picked, sun-dried coffee beans are spread on beds in an open-sided storage facility for the duration of the rainy season, June-September. Monsoon winds bring moisture to the beans, and their size doubles. At the same time, the acidity of the beans decreases, and they absorb a unique aroma. During the process, which lasts 12-16 months, the beans are turned by hand several times a day to ensure that the monsoon winds and moisture affect all beans. After the process, the beans are polished and sorted by size and color. The highest grade AA Monsooned Malabar bean is uniform in size and shiny.
