Oolong

Oolong tea is only partially fermented, i.e., oxidised. It can be almost green in colour if fermentation is less than 20%, and almost black if fermentation is 80%. And everything in between. It skilfully combines the best characteristics of green tea with the appearance and balanced taste of black tea. Its taste is often closer to green tea, even though the colour of the tea leaves is closer to black tea. It can also be a combination of green and black tea, either unflavoured or flavoured. Oolong often has a distinctly fruity character. During processing, the leaf retains its long shape and is larger than black tea leaves.
In Asian tea cultures, Oolong is a very popular and highly valued tea.
