Yellow tea Yellow Buds is one of the rarest types of tea in the world. The production of yellow tea amounts to only a few hundred kilograms.
In late March to early April, white buds are hand-picked. The fermentation of the buds is prevented by heat treatment and by keeping them in darkness and an oxygen-free environment. After processing, about 30% moisture remains. The buds are then transferred to a cool place and covered with cloth, allowing them to ferment; this process can take up to 48 hours. During this time, the buds turn yellow due to the phenols present in the tea. Brewed yellow tea is amber in color. The taste is uniquely aromatic but quite mild. Yellow tea has an enticing and pleasant bouquet.
Steeping time 1-3 minutes, water temperature 75-80 degrees Celsius, dosage 1 teaspoon per cup or 4-5 teaspoons per liter.
